Pumpkin Cookies – Arizona State Fair Winner
3 cup sugar
2 TBSP. pumpkin pie spices
2 TBSP. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2 1/2 ccup pumpkin, canned
1 cup vegetable oil
2 eggs, lightly beaten
1 tsp. vanilla
5 cups flour
Preheat oven to 350 degrees. Combine sugar, spices, baking powder, baking soda and salt. Mix well and reserve. Mix together pumpkin, vegetable oil, eggs and vanilla. Blend the sugar mixture into the pumpkin mixture. Gradually blend in flour. drop by teaspoonfuls, 2 inches apart, onto an ungreased cookie sheet and bake for 15-20 minutes. Cool on wire racks.
